"Connie Casserole"

That's me, "Connie Casserole", a line stolen from Emory, a character in Mart Crowley's "The Boys in the Band". He enters the party holding aloft a large lasagna ready to feed the crowd.
I love, love, love casseroles.
They're easy one-dish meals that can last a few days as leftovers or easily frozen for a future time when you just don't have the energy to cook...all you have to do is push 'defrost' on the microwave.
Years ago my friend Doris gave me one of my favorite cookbooks, Jean Anderson's "Dinners in a Dish or a Dash". I highly recommend it. I've turned to it more times that I can count. The casseroles are simple to make and very delicious.


One of my favorites is the chicken pot pie recipe.
I made it last week for a just a friend and myself when the phone rang; two more friends just happened to be in the neighborhood and could they stop by for a drink? "Stay for dinner" I said, as I pulled the piping hot dish from the oven. I paired it with a quick spinach salad, they brought a bottle of wine, and everyone was happy.


The recipe is very adaptable, this time the 'dumpling' were biscuits but you can easily substitute croissant roles. Here's one I made a few weeks ago...let's just say Pillsbury is my friend.
